Your data
Nothing you enter leaves your device. The apps have no accounts, no server-side storage and no analytics on your content — everything lives in your browser's local storage, on the device where you typed it.
The trade-off is that browsers are allowed to clear that storage on their own, and they do:

Keeping your data safe
- Open the app now and then. On iOS especially, inactivity is what triggers a cleanup.
- Keep some free storage on the device.
- Don't clear the browser cache for the site.
- Don't use private or incognito mode for anything you want to keep.
- Export a backup. Every app either has a Download data / Backup option and a matching re-import, or is getting one. That file is yours — keep it somewhere you can find it again.
If your data has already gone
There is no copy on a server to restore from, because there is no server. If you have a backup file, re-import it. If you don't, the data is unfortunately gone — which is exactly why the export exists.
